Mid-week meals drive me crazy coz I never really know what to cook for dinner. If I had my way I would eat chicken 5x a week and then maybe spice things up a little on the weekends with fish or a slab of beef. But I don’t live on my own ergo, I have to make mid-week meals appealing to the rather fussy-eater boyfriend who by the way, would be happy with a daily dose of steak and chips.

Garlic Butter Shrimp on Speghetti
Chilli, garlic and butter make the perfect sauce for shrimps. Place these over some freshly boiled sheghetti and you have a meal you won’t regret. It’s very comforting and satisfying. I adore shimps and this dish makes the perfect mid-week meal when you simply cannot be bothered slaving away at the stove.

Gorgeous Gougères
What’s a girl to do on a reaaaaally slow day? Watch tonnes of YouTube videos and get food inspiration! Today I tried my hand at Gougères, a classic French cheese puff. These took me less than 30 mins to make and are really yummy. If you have friends over I suggest you make more than just one batch coz they will disappear before your very eyes.

Savoury Chilli Cheese & Bacon Bread Pudding
Had a dinner party then got left with a basketful of assorted dinner rolls after. Didn’t want to throw them out so I turned them into a scrumptious new side-dish ~ a savoury chilli cheese and bacon bread pudding. Definitely a good way to prevent wastage of good food.

Eve’s Apple Bake with Vanilla Custard
More spiced up desserts for the cold months ahead. Today I give you a simple homey pudding of spiced apples and vanilla sponge called an Eve’s Apple Bake. It’s one of the first puddings I have ever made from scratch because it is so easy to do … although I still managed to screw it up (I was THAT bad at baking). Served with ice-cream or vanilla custard, this dessert will be 100% gratifying.

Spiced Baby Bundts with Butterscotch Glaze.
Beautiful baby bundt cakes with all the spicey flavours associated with the festive season. In Holland spiced cookies called ‘Speculaas’ and ‘Kruidnoten’ are traditional for this time of year, so I thought how about some spiced cakes as well to add to the mix. These are then glazed with a creamy butterscotch glaze and given a light dusting with cinnamon sugar. Brilliant!

Pomegranate & Rosewater Marscapone Creams
When I think of pomegranates it conjures up images of exotic Central Asian cities like Istanbul and Marrakesh. Silks, saffron and the souq (large open-air markets) are also what I think of. I hope to capture some of that exoticness in this simple and delicate dessert, bringing a bit of spice and a bit of sweetness with every spoonful.
