Back from Iceland, moved into new apartment and then I baked this. I have never baked a chocolate cheesecake before but then I thought “how hard can it be, right?” Standard cheesecake method, just add melted chocolate. Sorted. Haha. Anyway, this cheesecake tart is divine and all I am saying is you should make it too.

Today I am trying my hand at the thing I dread the most … making pie crust from scratch. Yikes! Very nervous but hey, I thought if I didn’t try it I’d never get over the phobia … so I did. And what came out of that oven was nothing short of a miracle. I couldn’t believe how I had managed to bake my first American-style pie from scratch and it turned out in one piece, looking every inch like how I had envisioned a pie to be.

I warned you that I would do this … and I have. Another tart recipe ready to go before the July heatwave hits Europe. This is a cheats version of a tart, therefore anyone can produce this without so much as a chipped fingernail or a strand of hair out of place.

Freshly sliced bananas laid over creamy homemade banana custard … all cradled in a crisp shortbread crust … finished off with a light drizzle of warm chocolate sauce. This combination cannot be beat. I took the concept from my all time favourite crêpe filling; brilliant in summer, especially with a side of freshly whipped chantilly cream.

This is me, making lemon meringue tartlettes for the first time. I must say making these was much easier than I had initially expected. Don’t know what took me so long to finally decide to attempt lemon meringues … oh, wait, I remember … a blow torch. HA!

This tart was inspired by my recent trip to Brittany, France. We went for just a weekend and returned home with quite a few delicious local products, one of them being a jar of St-Malo salted butter caramel. Warm tart, gooey caramel and a scoop of vanilla ice cream … sounds like perfection to me.

Delightfully delectable mini blueberry cheese tarts; these are very popular back home and have a very distinct look about them. Sweet pastry dough filled with creamy cream cheese, with a blueberry swirl. So happy to have found the recipe and I can now share it with my readers.
