Malaysian Prawn Sambal

I like this prawn sambal for its citrusy notes. This is a Malasian prawn sambal and it is cooked with very little liquid. Best eaten with nasi lemak, in my opinion, along side a mountain of ikan billis. If rice is not your thing, then flat breads are a good alternative.

Rosehip Tea Cheesecake with Vanilla Genoise

A daring break from the usual cheesecakes I normally do, this one made use of my favourite tea blend. The results were surprisingly decadent and pleasing in every way. This one has cake inside, as opposed to a biscuit crumb base.

Eggs Benedict

There is nothing better and more comforting than filling your belly with mouthfuls of runny yolks, bacon and creamy hollandaise sauce. Usually I’d simply stroll into my local cafe to get it but here in the Netherlands I get no such luck. So I made these myself. A bit time consuming, but well worth it.
