Made these scrummy mini banana nut cheesecakes to test out my new Baker’s Pride loose-bottomed tin and they turned out great. The boyfriend will now have the honour of carting the lot to the office tomorrow and we will see how they are received by this co-workers. The pan itself was a delight to use and it produced a very even bake. Pleased with purchase. God bless Amazon.

Buttery Marble Cake
I like old-time favourites like this simple butter cake which I then turned into a visually pleasing marble cake. It is moist and flavourful, with a generous hit of chocolatey goodness. No icing needed … just the way I like it. Mmmm, I think I will have more tea with my cake, please.

Bake Club Challenge: Oreo Bottomed Brownies
Brownies go down fast in this house; how can they not? They are sooo delicious, one slice is never enough. I made these for March’s Bake Club Challenge and I made some personal changes to the original recipe simply because I do not like nuts in my brownie. This brownie variety was kinda made up in the middle of the night and it turned out to be a keeper. Another one for my brownie file.

Rosehip Tea Cheesecake with Vanilla Genoise
A daring break from the usual cheesecakes I normally do, this one made use of my favourite tea blend. The results were surprisingly decadent and pleasing in every way. This one has cake inside, as opposed to a biscuit crumb base.
