Cannelloni al forno

Mmmm … pasta, I love it. Simple, versatile and it fills you up. Functional and economical, yes, but that doesn’t mean you sacrifice flavour. Pasta served with butter is just as satisfying. Today I am making one of my favourite baked pasta dishes which is also vegetarian friendly – stuffed cannelloni with a ricotta and spinach filling. I have made this many times in the past and it never disappoints … so I am putting this up on the blog in the hope that you try it as well.

Creamy Spinach and Shrimp Fettuccine

I always preferred pasta in cream sauces to those made with red sauce. Lots of garlic and a splash of cream makes for a lovely bowl of comfort on a cold winters day … just don’t forget the grated cheese and smokey bacon bits as well. Mmm, so good! This dish is pretty simple to make and will be done in about 30-mins from start to finish.

Mughlai Chicken & Jeera Rice

Chicken Mughlai is yet another famous dish bourne out of the royal kitchens of the great emperors of northern India. It is a beautiful dish of tender chicken cooked in a rich, creamy nut gravy. With it I am serving jeera rice … a wonderfully fragrant rice dish made by adding toasted cumin seeds, onions and coriander.

Rigatoni in Beef & Mushroom Ragu

Simple day to day cooking should never feel like a chore. On days where I don’t feel like cooking very much I like to make a quick pasta meal, usually with a tomato base as opposed to the creamy white sauce ones. Here I share a simple rigatoni recipe with a mince beef and mushroom ragu so simple, anyone can do it. You just have to wait an hour for the sauce to cook … but it is well worth it.

Cheesey Baked Spanish Rice with Grilled Chicken

Isn’t it perfect when you find yourself stuck with the prospect of no food and then come up with an awesome dish out of thin air in the end? This is one of those dishes … with a little help from a friend. Baked Spanish rice and grilled chicken with a creamy cheese sauce poured on top. Mmmm … doesn’t that sound divine?

Tagliatelle with Tuna, Crab, Spring Peas and Asparagus

I rarely get creative with pasta. I know the ones I like and I tend to make those over and over again. Hey, if it ain’t broke, right? Anyway I had to find a way to use up some expensive asparagus and this is what I did with them. Simple flavours all put together in thirty minutes flat because everything else is already cooked.

Nasi Kuning with Malaysian Beef Rendang

A couple of days ago I introduced a very classic Chinese delicacy using glutinous rice. That was the first time I ever worked with the stuff and it was a rounding success. Encouraged, I now present another Malaysian classic, popular amongst the Malay community. The rice is simple to be sure, but the rendang that goes with it is more on the technical side. Nasi kuning means yellow rice in Malay.

Lo Mai Gai {Steamed Glutinous Rice with Chicken}

If you have been to dim sum restaurants then you must be familiar with this staple dish. Sticky glutinous rice is steamed with chicken, Shiitake mushrooms, sweet Chinese sausages and dried shrimp along with a selection of sauces to create this wonderfully aromatic and satisfying brunch item. This is the first time I am attempting this for myself at home, so I am borrowing the recipe from someone else.

Spinach Soba Noodles & Grilled Paprika Salmon

I know I said this month would be dedicated to the food of love but somehow I seem to have shifted into Japanese gear. Today I made this cold soba noodle dish mixed with chopped spinach and served with a side of simply grilled salmon.

Nasi Lemak

The most iconic street food of Malaysia, nasi lemak has nourished and fed generations of Malaysians since its creation. It’s cheap, portable and so gosh-darned good … sometimes one is just never enough.
