The 5-minute Lemonade Scone

 

 

 

Today I found myself idly turning the pages of an old notebook in which I have collected many various recipes over the years. I stopped at this page where I had written down a very long and detailed recipe on how to make the perfect scone from scratch. Just reading it made me feel tired already!

 

 

So I hopped online and started looking for an easier recipe. Then suddenly I recalled someone once told me about lemonade scones that were quick and easy. I couldn’t remember the details to I relied on the internet to tell me. In truth, I have been meaning to make these for myself a long time …. just never got round to it, I suppose.

 

 

I found a recipe and I reread it … there was hardly any ingredients on that list and I started becoming quite skeptical about the success of the scones. But I went out to the store anyway to pick up a bottle of soda and the necessary bits and pieces. So here is what you’ll need.

 

 

 

 

 

 

  • 3 cups self-raising flour
  • 1 cup buttermilk  (I didn’t have buttermilk on hand so I used cream, to which I added 1 tbsp white vinegar)
  • 1 cup fizzy lemonade  (like Sprite or 7-Up)
  • 1 tsp baking soda
  • pinch of salt

 

 

So all you do is place the flour in a bowl with the baking soda and salt. Stir thru to evenly distribute. Then pour all the liquids in at the same time and mix together lightly until just combined. Doesn’t matter that there are lumps or bits of dry flour.

 

Turn everything out onto a floured surface and shape into a rectangle about 1.5 – 2.0 cm high. Just use light patting motions to spread out the dough … no rolling pin required. This is a fairly wet dough, so powder your hands and the work surface thoroughly.

 

Dipping a round pastry cutter in flour, proceed to cut out rounds and place them on a baking sheet lined with parchment. I managed to get eight on one tray. Brush tops with milk.

 

Bake for 10 – 15 mins in a 220ºC oven. Remove and allow to cool for a few minutes then serve while they are still hot with lots of butter and jam.

 

 

 

 

 

I was very surprised at how they turned out. Light and fluffy on the inside with good flavour and not overly sweet. In fact, they had more of a savoury flavour than anything else. The tops were light and golden with a nice crust. They smelt GREAT!! R had five in one sitting ~ they were that good. He didn’t even want them with jam; he just ate them with butter (and now he tells me he’s not hungry for dinner anymore … sigh).

 

 

 

 

Anyway, this is a short post from me just to bring you this recipe in case you haven’t heard or tried Lemonade Scones before. I’m sure they have been around for ages. But if you want scones and cannot be bothered crumbling cold butter into flour then give this one a go. They are divine! Glad I finally tried these out, and am very happy to share this recipe with all my readers.
