Jumbo Cheesy Baked Prawns

A spectacularly visual dish, these cheesey jumbo baked prawns will definitely be the eye-catcher at your table. While it looks fancy, the preparation is surprisingly easy and you will be done in minutes. If you don’t want to broil, then these would cook very nicely on a barbeque over gleaming hot coals as well

Malaysian Prawn Sambal

I like this prawn sambal for its citrusy notes. This is a Malasian prawn sambal and it is cooked with very little liquid. Best eaten with nasi lemak, in my opinion, along side a mountain of ikan billis. If rice is not your thing, then flat breads are a good alternative.

Seafood Bread Bowls

A beautiful warming fish & seafood stew, served in a crusty bread bowl. I have always wanted to serve soup this way … and now I have finally done so … yay, me! This soup can be done with clams and mussles too, if you find it difficult to get hold of lobster.

Party Food : Smoked Salmon Tartlets

Bite-sized pieces of food is where I like to play. It may be a tad time consuming to make little nibblies x50, but I love presenting them. This recipe is a wonderful way to incorporate fish into your hors d’oeuvres menu. It’s light, it’s fresh and has a bit of zing coming from the lemony notes.

Garlic Butter Shrimp on Speghetti

Chilli, garlic and butter make the perfect sauce for shrimps. Place these over some freshly boiled sheghetti and you have a meal you won’t regret. It’s very comforting and satisfying. I adore shimps and this dish makes the perfect mid-week meal when you simply cannot be bothered slaving away at the stove.

Gỏi Cuốn (Vietnamese Rice Paper Rolls)

It is stupidly hot this month and I cannot be bothered cooking. I want cold salads and ice cold teas … lots of them. Back in Australia I could simply walk down to the local shopping mall or to an Asian cafe and have me a couple Gỏi Cuốn on the go, but sadly in Amsterdam they aren’t as common. So I simply made some myself, from memory (I had to think really hard).

Thai Glass Noodle Salad

Hot days call for light and fresh eating, and what better choice than one with a south east asian flavour. Cold noodles drenched in a sweet, salty and spicy sauce, tossed with a variety of fresh aromatic herbs and topped off with slivers of cold beef strips.
