Cheesey Zucchini Fritters

I have been frying everything I lay my eyes on recently, it’s like I’ve caught the deep-frying bug. Today I made deep fried cheesy zucchini and potato fritters as I had a bowl of leftover baby potatoes in the fridge. How convenient! Gỏi Cuốn (Vietnamese Rice Paper Rolls)

It is stupidly hot this month and I cannot be bothered cooking. I want cold salads and ice cold teas … lots of them. Back in Australia I could simply walk down to the local shopping mall or to an Asian cafe and have me a couple Gỏi Cuốn on the go, but sadly in Amsterdam they aren’t as common. So I simply made some myself, from memory (I had to think really hard).
