A daring break from the usual cheesecakes I normally do, this one made use of my favourite tea blend. The results were surprisingly decadent and pleasing in every way. This one has cake inside, as opposed to a biscuit crumb base.

Ricotta + Brandied Sultana Cheesecake
Woohoo! This one turned out to be quite a success and the actual cake itself is bursting with flavour. It’s a pretty special cheesecake, one that I have never tried before. But now that I have I think it will be a good one to have around for Christmas as an alternative to fruit cake and plum pudding.

Lime + Passionfruit Curd Tarts
Been and done with lemon curd. Time to get jiggy with other flavours and I thought a pairing of limes and passionfruit would be a match made in heaven. And I was right!! So easy, so delicious, so lip-smacking gooood.

Pomegranate & Rosewater Marscapone Creams
When I think of pomegranates it conjures up images of exotic Central Asian cities like Istanbul and Marrakesh. Silks, saffron and the souq (large open-air markets) are also what I think of. I hope to capture some of that exoticness in this simple and delicate dessert, bringing a bit of spice and a bit of sweetness with every spoonful.
