Mughlai Chicken & Jeera Rice

Chicken Mughlai is yet another famous dish bourne out of the royal kitchens of the great emperors of northern India. It is a beautiful dish of tender chicken cooked in a rich, creamy nut gravy. With it I am serving jeera rice … a wonderfully fragrant rice dish made by adding toasted cumin seeds, onions and coriander.

Kheema Mater {Minced Mutton & Peas in rich gravy}

Kheema Mater is a rich minced mutton dish cooked with peas in a wonderfully savoury gravy and it comes straight out of the royal kitchens of the great Mughal dynasty. While a large portion of India observes a purely vegetarian diet, those living in the north in particular relish rich meaty dishes cooked to perfection in creamy sauces. Many of these dishes were influenced by the Muslim rulers of the time, and obviously if it’s feeding the king, then it’s got to be good-eats.

Oozy Ham & Cheese Crepes

Did not get to the shops today. Actually, I simply did not want to leave the house for various reasons (pure laziness) so this meant by the time dinner came round I had nothing to cook. I could have had oatmeal or an omelette but I really wanted something ‘off-menu’. Therefore, this happened …>> Oozy Ham & Cheese Crepes.

Aloo Gobi: Spicy Cauliflower & Potato आलू गोभी

Tick tock, tick tock. It’s 9 pm and I was starving … yet there was nothing to cook. What do I do? Look for leftovers and turn them into a nutritious vegetarian meal, of course! Aloo gobi can be found on pretty much any menu at an Indian restaurant and there is good reason for it. It is so simple to cook and it is delicious! Have it with rice, roti or, like me, in a tortilla wrap because I could not be bothered making roti from scratch.

Rigatoni in Beef & Mushroom Ragu

Simple day to day cooking should never feel like a chore. On days where I don’t feel like cooking very much I like to make a quick pasta meal, usually with a tomato base as opposed to the creamy white sauce ones. Here I share a simple rigatoni recipe with a mince beef and mushroom ragu so simple, anyone can do it. You just have to wait an hour for the sauce to cook … but it is well worth it.

Pumpkin Curry with Prawns

What does one do when there is a pot of leftover spicy Asian soup chillin’ in the fridge? The boyfriend is never in the habit of eating leftovers the next day so sometimes I have to get creative and make a seemingly new dish from leftover ingredients. Here is a yummy and healthy curry dish which has a pumpkin base as the gravy, string beans and prawns for texture. Totally yummy!

Simple Beef Pie

Hurrah! Cold weather has finally come! I love fall temperatures as this usually means I can start making stews and thick soups for dinner again. Today I made a really simple beef stew, baked it for 4-hours and then topped it with puff pastry ~ that’s dinner sorted for us. This size pie can feed two people for a couple of days or a family of six quite comfortably.

Wholemeal Pumpkin & Sunflower Seed Loaf

I don’t make too many bread recipes at home, but that doesn’t mean I don’t want to. I tend to be a bit cautious with bread because I question my skills and I hate to get things wrong, but with this Annabel Langbein recipe, bread woes seem to be a thing of the past (for now). Beautiful wholemeal bread crammed full of seeds and baked to perfection.
