Braised Udon Noodles in Soy Sauce

Hokkien mee is a classic Malaysian dish. However, I am calling this my ‘no-choice hokkien mee’ because I have no choice but to substitute udon noodles for proper yellow hokkien noodles. It is the closest I could get to the real thing, flavour and texture-wise. Not the real thing but still tastes great.

Nasi Goreng Kampung

Anyone who is anyone worth their salt with regard to Malaysian cooking will tell you that this is an iconic local dish. When done right it is ‘da BOMB!’, especially when there is lots of fried anchovies on top. Savoury, slightly salty and very spicey, this is one of my favourite fried rice dishes.

The Cooks’ Club Challenge : Chicken & Dumpling Noodle Soup

Quick and easy meals are so handy, especially when it is cold outside and you want to get something warm in your tummy ASAP. Lately we have been having some pretty bad weather, the kind where you don’t even wanna go out to the grocery store. So I stayed in with a bowl of dumpling noodles.

Laksa Lemak

The all time heavy-weight champion of the noodle world, Laksa Lemak is top on the list in both Singapore and Malaysia. Wonderfully fragrant curry gravy is poured over fresh noodles and heavily garnished with prawns, bean curd and fresh herbs. Many people would travel miles to find a good laksa stall. As with all soup based noodle dishes, the secret lies in the proper construction of your stock … fortunately there is an easy way round this.

Mushroom Medley Risotto.

After years of shunning risottos I have finally made one of my own from scratch … and it’s all for me! No one else in my house eats mushrooms. Pah! They just don’t know what they are missing. Creamy goodness with big woody flavours, this recipe will definitely be the first one I will be turning to this fall season.

Udon in Mushroom & Mince Meat Sauce

It’s breakfast time here in western Europe, and guess what I’m having? I adore tossed noodles in thick black sauce but you can’t always find them where I live now. It’s times like these I miss the convenience of my favourite hawker stall and just ordering a bowl, accompanied with a glass of ‘teh peng’ (iced milk tea).

Spaghetti Puttanesca

This is a wonderfully delicious pasta dish, full of briny big flavours. Black kalamata olives, anchovies and caper berries all mixed together with fresh tomatoes and garlic. Simplicity and satisfaction all in one bowl. Not bad for a first attempt either. I enjoyed every mouthful. Mmmm … yummies in my tummies.

Ginger & Chicken Rice Porridge with Poached Egg

Ginger & chicken rice porridge is very warming, very filling and healthy. I used to hate it as a kid, but only because my Mom ruined it for me. Now, however, I am determined to rediscover this quintessential Asian staple and give it the recognition it deserves.
