Chicken in Mushroom Cream Sauce

Hi, folks.

I don’t know about you guys but I have been having issues with accessing my blog for the past week now. Not sure if the problem lies with my provider or that the massive DDoS attack is taking its toll (*grumble grumble).  So this post it coming to you rather later than expected.

 

 

Today’s recipe is a wonderful chicken in creamy mushroom sauce, with bits of tarragon coming thru. I first had a similar dish like this whilst in Paris a couple of years back. Just happened to pop into a random streetside bistro for dinner and this was what they served. Very simple but it really hit the spot.

The thing about France is that they rarely get a dish wrong. I have been to Paris twice and to other parts of France multiple times and one thing is always consistent : food done well. It can be the smallest of cafes and the cheapest of bistros, but no matter what we order (so far; touch wood) we have had nothing but the best of food experiences. Take for example this busy city bistro, not far from ‘des Invalides’ on rue de Grenelle … crowded with hungry tourists on a warm summers evening. We ordered from the set tourist menu, which came with either a starter + a main course, or a main course + dessert. € 15 flat price. Here in the Netherlands I would stay well away from menus like that, but what we got instead was a really nice dinner that exceeded my €15 expectations.Roast saddle of rabbit in gravy served with hot, buttery noodles. Delish! Roast chicken in gravy with buttery potatoes and a salad. Yummy!! Can’t remember what dessert was but I am pretty sure R. went for that option.

I don’t get very many opportunities to cook with mushrooms in the house simply because R. loathes them (silly bugger!) to the point of him gagging. So if ever I want to cook with mushrooms it would be for me personally, when I am alone at home. The recipe uses very few ingredients but the finished product will still impress.

Chicken in Mushroom Cream Sauce   (serves 2)

 

  • 4 boneless chicken thigh fillets
  • 1 tbsp butter
  • 2 shallots, finely chopped
  • 2 tsp minced garlic
  • 150 g of sliced brown mushrooms
  • 150 mls cream
  • 2 tsp tarragon mustard
  • Salt & pepper

 

 

 

Season the chicken with salt and pepper on both sides. Then brown them off in a skillet; 2 minutes per side. I used a neutral flavoured oil rather than olive oil.

 

Remove the chicken and put them aside on a plate. Keep them warm by covering loosely with foil.

Add the butter to the pan and add the shallots and mushrooms. Toss to coat and season with salt. When the mushrooms are soft and the shallots are cooked thru, add the garlic. Heat should be on medium.

After 2 mins, add the cream and tarragon mustard. Mix thoroughly and allow to reduce slightly. Return the chicken pieces to the pan and coat with the sauce. Cover and turn the heat down to low. Simmer gently for 10 mins until chicken pieces are cooked through.

Turn off the heat and serve garnished with chopped parsley or tarragon. You can have it with rice or with mashed potatoes and a salad.

The nice thing about this dish it that you can expand the recipe to feed a whole family without any trouble. Simply fry up the chicken pieces and place them in a large baking pan or pyrex baking dish. Then make the mushroom sauce as above, doubling the amounts of course, and pour it over the chicken. Place everything into a 200ºC oven for 15 – 20 mins and you are done. Garnish as per usual and you can serve the chicken in the baking dish itself, straight to the table. Fuss free dining for the family.

It’s cool if you are not a fan of mushrooms … you can use leeks or broccoli instead and it will still work out well. Just be sure not to over cook the broccoli. Nobody wants mushy veggies in their plate. To avoid this, add the broccoli flourettes to the pan during the simmering phase and allow the sauce to gently steam the veggies to perfection.
