This dish is a wonderful choice if you want a quick, scrumptious dinner without the fuss of prepping a myriad of different components. I took this recipe directly off Jamie Oliver’s 30 Minute Meals website and it was delicious! I made this dish in a cast iron Dutch oven and the chicken skins crisped up beautifully, the meat moist.
The ingredient list, you can literally count on one hand ….. ok, so maybe you need both hands. But its definitely a dish that will be making future appearances at my table. I omitted the chillies coz I wasn’t in the mood for anything spicy, but you can adjust the spiciness to you liking.
- Olive oil
- 4 chicken legs , skin on
- Generous bunch of basil, roughly chopped
- 2 big handfuls of yellow and red cherry tomatoes, halved
- 1 whole bulb of garlic
- 1 whole red chillie, finely chopped
Preheat your oven to 180°C/350°F/gas 4. Season your chicken pieces all over and put them into a snug-fitting pan in one layer. Throw in all the basil leaves and stalks, then chuck in your tomatoes. Scatter the garlic cloves into the pan with the chopped chilli and drizzle over some olive oil. Mix around a bit, pushing the tomatoes underneath. Place in the oven for 1½ hours, turning the tomatoes halfway through, until the chicken skin is crisp and the meat falls off the bone.
See! I mean how easy was that?? Now go and enjoy your dinner, and impress your dinner guests who probably think you slaved away all day preparing this meal.
