Warm Cajun Chicken Aocado Salad with Lime-Mayo Dressing

 

 

 

 

I’d like to say I am on a salad roll here, but two days of salad posts hardly qualifies. I am on day two of a salad lunch but only because I have leaves to finish in the fridge because tossing them out would feel like a waste. Is it just me or is the cost of salad really expensive for the amount you actually get once you pop the bag? It’s shocking! It’s no wonder many people choose to chow down on cheaper alternatives. R. doesn’t like anything green and leafy. In fact he stays away from veggies of all kinds. There are times where we argue over the number of carrots he has agreed to eat at dinner … usually about three thumb sized pieces. If I so much as push for one more there will be a riot. Therefore today, like all other salad days, this salad is a meal all for myself and myself alone.

 

 

 

Ingredients: (serves 2)

  • 2 skinless chicken breast fillets
  • 4 cups mixed leaves
  • 1 ripe avocado, sliced
  • 1 red onion, sliced
  • handful of coriander leaves
  • 1 bottle of Cajun dry seasoning

 

 

Lime-Mayo Dressing.

  • 2 tbsp lite mayonnaise
  • juice of half a lime
  • zest of one lime
  • 1 tbsp white vinegar
  • 2 tsp sugar
  • salt & pepper

Start with the dressing, as it needs time to sit and mellow out before dressing the salad. So combine everything in a bowl, whisk and taste for seasonings. Then set it aside in the fridge to chill out.

 

Now butterfly the chicken breasts to even out the cooking surface. Then sprinkle each side with dry Cajun seasoning … mine already had salt in the mix so I did not salt the chicken first.

 

Heat a non stick pan on high. Spray with cooking spray or butter. Sear each side of the chicken, then transfer to a baking tray and finish off the cooking in the oven at 180° for about 10 minutes. Remove chicken and allow time to rest the meat.

 

In the meantime, prep the salad, avocado and onion. Plate up and arrange everything properly … then slice the chicken and place it on top of the leaves. Add chopped coriander and drizzle some of the lime dressing over the salad. Serve with a wedge of lime for squeezing over the chicken … really brings out the flavour.

Really fast and easy salad that packs a lot of flavour in every mouthful. Am a big fan of chicken because of its versatility. Case in point, this very salad. I could happily eat chicken everyday of the week … but I suspect R. would be a touch resentful at that stage. He’s a meat eater through and through. You should have seen him on our recent trip to Ireland; he was in heaven because beef and lamb are relatively cheap there compared to here. He had bacon in the morning, ham sandwich for lunch and big juicy steaks at dinner. He did not order chicken once. Ever. He was happy while I was always stuffed to the gills coz portions in Ireland are veerryyyy generous. However, I did manage a salad in Dublin … the only one during the entire weeks trip … a classic chicken Caesar salad which was prepared to perfection.

 

 

Now that we are back I feel the need to detox and eat light and green things. So perhaps this month will turn out to be salad month in the end for me. 🙂  Not a bad thing at all … coz I have quite a few lined up in my head already. Stay tuned folks!
