This is going to be a nothing recipe, simply because I woke up today and felt like pancakes were in order. Pancakes are nothing new, people can make them with their eyes blindfolded and one hand behind their backs.
I generally make two kinds of pancakes at home: plain buttermilk ones or chocolate ones (YUM!!) … but today I decided to add a touch of flavour for no particular reason other than the fact that I had some cinnamon sugar lying about. I would have put apples in the batter too but I was fresh out. Sometimes, on special occasions, I like to get creative and fancy up the pancake platter … Coconut Pancakes with Mango and Passionfruit Yoghurt for starters, or Buckwheat Pancakes with Smoked Salmon and Scrambled Eggs and a glass of champagne to ring in the new year. For Valentine’s Day I made these really cute heart shaped ones using a cookie cutter.
Pancakes use the most basic of ingredients at home … flour, sugar, eggs and milk … and they take just minutes to make so there simply is no excuse not to make some. Also, who needs to wait until breakfast? I used to make pancakes at midnight all the time and invite friends round too! Pancakes remind me of my Mom and of when she used to make them for us on occasion.
Cinnamon Breakfast Pancakes.
1½ cups self-raising flour
½ tsp baking soda
1½ tbsp cinnamon sugar
1 whole egg
2 tbsp melted butter
pinch of salt
enough milk to make the pancake batter (I usually eyeball it)
Chuck everything into a mixing bowl and mix with a wooden spoon or wire whisk. Done.
To cook pancakes use either a non stick pan, a cast iron skillet or an electric griddle. Smear some butter on the hot pan then ladle some batter directly on it. Keep the fire on medium low and allow the pancake to cook gently until bubbles break the surface. Then flip and cook the other side for only about a minute.
Plate up and serve with melted butter and syrup.
