Had a craving for soup, but I didn’t want a broth … neither did I feel like having a heavy creamed soup. So I went fifty-fifty and devised my own version of Thai coconut curry soup. The ginger and lime leaves are so warming and refreshing all at the same time; the coconut milk gives it a creamy texture but not heavy. Perfect! A meal on it’s own, I must say.

Cheat’s Malaysian Beef Curry
Who says cooking a succulent beef curry is hard and takes hours and hours? I do it all the time, at least once a month and it comes out perfect everytime in just under an hour. The meat? It is fork tender and jam packed with flavour. Here’s how …

Guest Blogger Entry : Tom Yam Goong
My first guest blogger is Sarah Volpe, an English girl who currently lives on the island of Koh Samui, Thailand. An avid food blogger herself, she has graciously sent me her recipe for that classic Thai dish ~ Tom Yam soup with Prawns.

Cheesey Zucchini Fritters
I have been frying everything I lay my eyes on recently, it’s like I’ve caught the deep-frying bug. Today I made deep fried cheesy zucchini and potato fritters as I had a bowl of leftover baby potatoes in the fridge. How convenient! These scrumptious little morsels are sure to be a hit with not only the kids but the guests at your next cocktail party as well.

Chicken Fingers & Mozzerella Sticks.
I call this the Kids’ Meal coz this sorta thing would go down really well with every child. The thing is I cook this for my boyfriend and he loves it. This recipe is easy, it’s fun and best of all it is economical and a whole lot better than buying the frozen stuff. This version is probably a lot healthier too since you know it’s got nothing in it but fresh (real) chicken meat and cheese.

Gỏi Cuốn (Vietnamese Rice Paper Rolls)
It is stupidly hot this month and I cannot be bothered cooking. I want cold salads and ice cold teas … lots of them. Back in Australia I could simply walk down to the local shopping mall or to an Asian cafe and have me a couple Gỏi Cuốn on the go, but sadly in Amsterdam they aren’t as common. So I simply made some myself, from memory (I had to think really hard).

Thai Glass Noodle Salad
Hot days call for light and fresh eating, and what better choice than one with a south east asian flavour. Cold noodles drenched in a sweet, salty and spicy sauce, tossed with a variety of fresh aromatic herbs and topped off with slivers of cold beef strips.

Fuss Free Chicken Curry
Want to add a little spice to your dinner table? Look no further with this creamy lemongrassy mild curry. Serve hot with basmati rice, or with flat breads. Best of all this curry will taste way better the next day after its had some time in the fridge to develop more flavor, therefore its a great make-ahead dish ~ hence why it is called “fuss free”.
