It’s all gone downhill so suddenly with regard to the weather, so today I got inspired and made a hearty stew to cheer me up from within. Yummy boneless chicken, cubes of ham, a medley of vegetables … and all served with a side of warm herby savoury scones. Comfort food at its best!

Traditional Buttermilk Scones.
Scones for tea … enough said! If in doubt over what to serve for tea, especially if you are not a fan of sweets and cakes, this will go down REALLY well. This is also a brilliant base recipe which you can expand to include other flavours of your choice: currants, sultanas, cranberries, chocolate chips, herbs or bacon.

Viv’s Great Big American Food Adventure: Maryland-style Crab Cakes
Focusing on a very special dish from the state of Maryland today, I hope I don’t muck it up. Sweet crab meat is pressed into a pattie and baked in the oven with some butter and then served up with some tangy homemade tartare sauce. Serve this with a side salad or as is, as part of your Easter luncheon. Both kids and adults will go wild for these little morsels.

Viv’s Great American Food Adventure: Chilli Con Carne on Baked Potatoes
Chilli con Carne means chilli peppers with meat, and this dish is 100% a made in America dish, albeit with strong Mexican influences. Today I share with you my version of chilli, which is mild on heat but with a full bodied all round flavour. I use ground beef as opposed to chunks of beef. A fairly simple meal to put together and it can definitely feed a crowd … so cook up a batch and dig in to some wholesome good eats on a baked potato.

All American Smokey Bacon Corn Chowder
Item #2 on my list of famous American dishes … a Smokey Bacon Corn Chowder. Rather simple coz everything gets tossed into the pot and then blitzed to creamy perfection. Wonderful smokey bacon flavour coupled with sweet corn kernels … man, the pairing is incredible. Definitely a keeper.
