All the good things in life seems to start with the letter ‘C’, like cream cheese, cranberries, chocolate, Christmas and carrot cake. I like all manner of spiced cake with fruit in it and the carrot cake is no exception (so long as its low in nuts). I thought I would give it a go considering I have never made a carrot cake in my life.

Coconut & Cherry Cookies
This was a double experiment to see if I could finish up all the dessicated coconut which I bought so enthusiastically last month, and also to see if these babies would be a good choice for Christmas. Well I think they are a bit too light for Christmas but still yummy with a cup of tea.

Carrot & Chickpea Soup
Once again I had too much of one kind of veggie in my fridge, so the best way of getting rid of them was to dump them all into one pot and whip up a batch of creamy soup. Chickpeas were added to thicken the consistancy and to up the protein content. A healthy and delicious meal.

Light Box
Been mulling over the quality of my photos lately and today I finally found the solution to better photography … a light box! Super Duper happy with my new purchase, even if it is a cheap version from the hobby aisle at the discount store.
